Abstract
Cookies are ready-to-eat popular snack foods that are widely consumed by people of all ages due to their affordability, convenience, long shell life and nutritive value. The present study isolated mycoflora and determined the proximate analysis of cookies sold in Ago-Iwoye, Ogun State. The cookies samples were analysed for crude protein, crude fat, crude fiber, ash content, moisture content and carbohydrate content and the obtainable value ranged from 4.39±0.49 to 7.27±0.62, 10.23±0.01 to 18.48±0.23, 1.42±0.04 to 3.43±0.02, 1.15±0.01 to 2.15±0.18, 2.28±0.00 to 5.67±0.29 and 72.09±0.68 to 80.58±0.31 respectively. Two fungi genera isolated from the cookies samples were Aspergillus spp. and Fusarium spp. The isolated fungi are dangerous to human which made the biscuit unhygienic for human consumption. Also, the cookies samples were high in carbohydrate which might be a reason for the low ash content and crude fiber. Though, the content of protein, fat and ash in the flour was high enough to supply the daily requirements in the diet. Too much of carbohydrate can increase sugar in the body. Due to the contaminant in the cookies samples, it recommended that storage condition of cookies should be of utmost concern because it is expected that the cookies are well packaged and hygiene from the factory.
